Top food duo in Orlando resort kitchen

A huge helping of talent is behind the inspired new dining experiences at CLC Regal Oaks, Orlando, which opened this year.

On July 1st, Shubee’s Coastal Grill & Bar swung into action serving guests at the resort; the 2nd Florida property in the resort portfolio of European developer CLC World Resorts & Hotels.

A former cop, honourably decorated, with the City of Baltimore, Pat ‘Shubee’ Bearry is the celebrated deli owner/chef fronting the new restaurant along with partner Jennifer Daskevich. Jennifer, a food, beverage, wine pairing and styling expert, is a lawyer turned award-winning culinary competitor.

The Shubee name first came to notice at North Redington Beach, Florida, where Pat’s ‘Florimar’ crab cakes and seafood specialities became a sure-fire hit with customers. His fame grew and in 2014 Shubee was named Top Local Chef in Tampa and ranked among 10 finalists at the World Food Championships held in Las Vegas.

Jennifer’s move from the court rooms of California to winningest food competitor, along with her wine expertise, saw her crowned 2013/2014 World Sandwich Champ and Game Day Chef Grand Champion at the 2015 Rose Bowl. In addition to a string of competitive successes, both cooks are known for their TV appearances.

From perky breakfast to late night cookie sundaes

This creative duo has introduced a distinctive style of dining to CLC Regal Oaks with ‘coastal cuisine’ focused on fresh Florida ingredients. Mouth-watering menu choices are available from breakfast through lunch and dinner to late night snack; served in the resort’s main restaurant, by the pool and, weather permitting, under the stars. You can even have it ‘room service’.

Anyone for The Coastal’s signature dish of a full pound of mussels over linguini with a spicy lemongrass broth; sautéed shrimp with pineapple Pico de Gallo and rice & black beans; a daily Fresh Catch with yellow curry sauce and agave roasted sweet potatoes; island pulled pork sandwich with grilled pineapple on a sweet Hawaiian roll; or a healthy spinach and berry goat cheese salad?

Menus change according to season and are designed to get owners, business and vacation guests, family reunions and golf parties drooling at the prospect of delicious food ‘inspired by beaches around the world’; with Craft Cocktails, Coastal Tapas and Daily Specials all part of the colourful mix.

Known as a ‘gentle giant’, with the ‘guns’ of one who takes fitness real serious, Pat is constantly displaying his ‘muscle’ in the kitchen winning People’s Choice for his Maryland Crab Cakes at the Island View Casino, Gulfport, ensuring his appearances for Season 6 of Cut Throat Kitchen.

He says: “I love a healthy lifestyle from going to the gym to eating the right things always to maintain this lifestyle.”

Known for her World Sandwich Championships’ luscious Argentinean chimichurri sauce drizzled over “The Coastal’s” 8oz Ribeye Steak Sandwich on Texas Toast, and her flair for food design and wine pairings, Jennifer’s tide is rising in the food and entertainment industry.
